Dolores “Dee” Coleman
Chef Dolores Coleman learned to cook the way most great chefs do: standing next to her grandmother. Raised between New York and the West Indies, she grew up around food that meant something, food that carried heritage, fed a household, and brought people to the table. By the time she landed in Marin's catering scene, years before culinary school, she'd already developed the instinct that still drives her work today: source the best ingredients, then let them do what they're going to do.
She graduated from the California Culinary Institute in 2011 and spent the next several years exploring the industry before returning to what she loved most. Catering. "I love designing menus for my clients that will gracefully complete their event," she says. "I want you to always remember the food."
People do. Whether she's catering a private dinner during a power outage (twice, actually) or feeding 2,500 people at a single function, every dish leaves her kitchen with intention. As an organic chef, Dolores has built her career around a single idea: that organic quality ingredients and soul food belong on the same plate.
When she isn't designing menus, prepping organic school lunches, or sending out home delivery meals, you might catch her at a Hamilton performance, an SF Giants game, a New Edition concert, or simply spending time with her family.

The Team
A kitchen runs on more than recipes. It runs on the prep cook who shows up at five in the morning to start the stock, the driver who knows which loading dock at which school, the manager who remembers that one kid's dairy allergy without checking the list. The team at Dee's Organics is small on purpose. We've built it slowly, one person at a time, around people who care about food the way Dolores does. Most have been with us for years. A few helped build the place from the start. All of them treat every meal that leaves the kitchen like it's going to someone they know.
